the concept of freeze drying is sublimation in which the frozen food is subjected to gradual increase in temperature most favourably in a vacuum environment where by the ice sublimes into vapour without converting it into water.

Please move the second carcinogen sentence (beginning "In 2015, the") to a new "Health hazards" section. Right now, the introduction has two sentences about carcinogens, but nothing appears outside the introduction. To quote MOS:LEAD, "Apart from basic facts, significant information should not appear in the lead if it is not covered in the remainder of the article." 123.51.107.94 (talk) 23:47, 6 March 2024 (UTC)[reply]

Done. It seemed to fit best in the "curing" section, which also mentions salting and smoking. I left the short sentence about carcinogens in the lead. ~Anachronist (talk) 08:36, 7 March 2024 (UTC)[reply]
